 This year’s edition of food festival Smaka på Stockholm saw a record-breaking number of visitors and restaurants taking part at Kungsträdgården. Bouqueria was selected best participant, while Babas Burgers & Bites was selected ‘audience favourite’ by the approximately 350,000 visitors who attended. We caught up with Babas’ Karen Mowafi.

 What makes Babas so popular?

We focus on great food and great service with a familiar feel. We’re a strong team that have a lot of fun together – which I believe we also managed to convey at Smaka på Stockholm.

 Ordinarily, one would have to travel to the suburb of Rågsved to try one of your babas. What makes your burgers worth the detour?

All of our food is cooked from scratch with fresh produce and lots of love. We don’t cook in the way it is “supposed to be”, but do things our way. We work as a large family, with many close friends and relatives on staff, which will also see to it that our customers feel at home.

 At Babas, you let the customer do part of the work by building their own burger. Tell us – as an expert, what makes up the perfect burger?

My all-time favourite consists of: hamburger meat, classic buns, cheddar cheese, salad, tomatoes, pickled cucumber, bacon, coleslaw, mustard and honey dressing.
