When Dan Lorentzon started thinking about ways to lose weight without living off salads, he decided to turn to the humble egg. He quickly realized that there wasn’t a very good selection of restaurants offering egg-based meals in Stockholm, so at his wife’s suggestion he decided to open up his own – a fast-food place focusing on eggs, offering cheap food to go.

“I have worked in advertising for 30 years and I know branding, but I can’t cook so I needed partners. I ended up with a strong team: egg farmer Kent Jonsson, management consultant Fredrik Önrup, and Andreas Hedlund, a rather famous chef and winner of the prodigious Chef of the Year award,” Dan explains.

“We also have 63 other small partners who we found through crowd funding with Funded By Me.”

There hasn’t been much of a breakfast place trend in Stockholm recently, but this seems to be changing. Are Stockholmers finally learning to eat eggs for breakfast?

Stockholmers haven’t really had anything to buy except sandwiches. I think they will like what we offer when they find us.

Why should we eat more eggs?

Eggs are healthy, taste very nice, are easy to make different dishes with and are good for the environment. That’s why.

What’s the most unusual use of eggs on the menu?

Nothing is really unusual but we have something called Äggägg (eggegg). Cool name and very appreciated already.

Our small kitchen means we have to have a tight menu. When we open our next place that could change.
