Authentic Sweden on a Plate

The farmers – or at least their produce – are taking over the city at By:fiket, a restaurant and café run by *Lantbrukarnas Riksförbund*, a nationwide co-operative organisation for Swedish farmers with 170 000 individual members. The concept, which is to spread to other parts of the country in the future, wants to prove that there is profitability in offering good domestic produce that is also affordable to most.

            Sisters Ulrika and Carina Brydling, both with extensive gastronomic experience, were invited to create a menu that mirrors the entire country, from the flat fields of Skåne to the mountainous terrain of Norrland. The clever solution to this vast challenge was to create regional sandwiches that feature local delicacies. Salads, typical Swedish cookies and cakes as well as the traditionally brewed *kokkaffe* – boiled coffee – is also on offer in a space that resembles a conventional country kitchen.
