Marcus Make-Over At Kitchen & Table

The restaurant at Clarion Hotel Sign is getting a new look and gastronomic concept, while retaining its former name Kitchen & Table. The hotel chain’s gastronomic creative director Marcus Samuelsson has decided that items locally grown and sourced, organic and sustainable are now the foundation of everything that comes out of the kitchen. Samuelsson has recruited Tal Borenshtein, formerly at F12-gruppen, as head chef for the project.

Borenshtein merges the multicultural cuisine of Manhattan with Nordic cooking techniques. The menu centres on greens – the so-called Urban Garden – with the option of adding animal protein.

The existing bar has been transformed into a sustainable bar with a next to zero-waste ethos, meaning waste will be minimised as far as possible.
