The design store Svenskt Tenn will be hosting a new exhibition from next week, Välkommen till biosfären (Welcome To The Biosphere), an exhibition created by artists Eric Ericson and Lars Arrhenius featuring works that explore issues of the environment, sustainability, ethics and economics. Inspired by that exhibition, Svenskt Tenn have announced that their Tesalongen, the tea lounge, is turning its menu in a more vegan direction this autumn.
The new menu is based on the findings of the EAT Lancet report, a report by the Eat Forum on what constitutes a healthy diet from a sustainability point-of-view, and what we need to do to achieve it. One of the report’s big conclusions was on the importance of beans – it’s now determined that both for our health and the health of the environment, we need to consume more. So Svenskt Tenn have had to be creative and come up with more ways to use them, now including them in bread, baking and other more off-piste options. Items on the new menu include croissant with ruccola, pea cream from chickpeas and marinated pepper, and chickpea roll with ruccola and radish.
