A year and a half ago Stockholm finally started issuing licenses to try to govern the new food truck fad. Among the army of rolling guerilla diners that had congested the streets in the name of feeding the people were the pink truck known as Miss Piggy. Under the official name “El Taco Truck” they were probably the strongest brand among the new breed of ventures offering meals on wheels.

Behind the idea was the duo of Nikola Adamovic and Niklas Bolle, and their concept was pretty straightforward – offering good Mexican food influenced by what they had tried in the US. And they did, one block at a time.

Their success might not come as a great surprise to those who are aware that Sweden consumes more Mexican food than any other nation in Europe. Despite this, we haven’t really seen an upsurge in restaurants catering to Tex-Mex tastes. For the most part, Swedes do Mexican food in the comfort of their homes through ready-made-kits from the supermarket.

Adamovic, who encountered real Mexican food through food trucks when he was a poor art student in L.A. and Bolle, who had a similar experience while residing in Florida, obviously don’t think it has to be that way. Now, due to the success of their rolling venture, they are taking the next logical step toward world domination and branching out into fixed locations.

On Nybrogatan, in the midst of Östermalm heartland, they have already opened up their first *taqueria* and the next location at Gärdet will be opening for lunch very soon. It seems the current trend of well-made fast food is still surging in Stockholm. And we’re not complaining.
