Co-Lab Brings The Coffee To Morfar Ginko

You’re probably used to spending your evenings at Morfar Ginko and needing coffee to restore you to humanity the next morning, but what if you could get your coffee at Morfar Ginko too? Stockholm-based coffee gang It’s Cold Brew and Baileys are opening up a pop-up brewery there this week that will give you the chance to exactly that.

Cold-brew coffee refers to the process of slow-steeping coffee beans in cold-water over several hours, instead of brewing with boiling water. This method produces coffee different in profile to normal coffee, with different flavours and caffeine consistency. A trend in America for years, the practise is now gaining popularity in Sweden. Co-Lab is the one of the latest signs of this trend, a pop up coffee brewery, run by It’s Cold Brew. It’s Cold Brew is a Stockholm based cold-brew coffee company run by Aadel Kertz, Stefan Axel Foley, Fiona Fitzpatrick and Mio Sallanto (and yes, that is the same Fiona from Rebecca & Fiona).

The pop-up brewery will be open from May 31 to June 4, from 13.00-17.00 every day. There will be various different varieties of cold-brew coffee available, including some flavoured with Baileys.

Aadel Kertz says “I’ve have the idea for five or six years, and then two years ago Fiona and Stefan suggested it again, and then we decided to do it. It’s another way to brew coffee. What’s great about it is that if you’re in the mood for a coffee on a sunny day, you can have one of these and enjoy it with ice. That’s what I think is best”.

For the coffee super-nerds, there will also be courses available in cold-brewing coffee. These run from 17:30-18:30 every day, and can be booked here.
