Star-sprinkled chef Mathias Dahlgren has shut down the ten-year-old Matsalen restaurant in Grand Hôtel to make space for the 100 percent vegetarian concept Rutabaga.
With his new concept, Dahlgren aims to create a top-notch vegetarian culinary experience. Like many of the city’s fine dining concepts, Dahlgren abandons the set tasting menus in favour of freedom of choice and adaptability for varying budgets. Perhaps Rutabaga will prove sceptics wrong this time; vegetarian food is more than iceberg salad.
